How is the console/gaming device connected to the router if it by wireless the only safe and latency-free wireless signal is 802.11ax 6E & 7 on the 6GHz band. Unfortunately, most gaming consoles don't support that wireless band, so it is best to wire the console by ethernet to the router for the best experience and low latency.

Haven't changed my set up for the last 8 months only started yesterday

It doesn't matter whether you haven't changed your environment if it is over wireless then it is likely the shared environment of wireless in the neighbours that has changed and causing interference now.
Unless one is connected over a wired ethernet connection now then it may be a fault with the broadband network but this is unlikely, please confirm the console is wired.
