I know it's been asked before but I don't seem to be able to get a complete answer.
I will be moving from from Virgin to Sky soon. I am aware how the fibre will arrive to my house (downstairs by the front door). My Sky router needs to be upstairs in my study so it can connect to my NAS. Will Sky installer run the connection cable from the front door up the stairs to my study replacing the old Virgin coax that currently runs up the stairs.

No, they won't touch the VM cable or any boxes, if the entry point for the Openreach Fibre is Downstairs then the hub will be connected nearby the ONT, they won't run a cable internally upstairs.
However, you could run ethernet cable from the ONT to your study yourself.
