I'm buying a house where I plan to sign up for Sky Broadband (Ultrafast+) and I'd like to find out how long activation of the connection typically takes, from the day that it's signed up for, to when it goes live, so that I can sign up in time for my move.
Does anyone have info on this?

I'd suggest doing so once you have a moving in date: there's inevitably a lead time even when the connection infrastructure is already in place, and this is usually quoted as ten working days.

Does the property already have a Openreach optical connection and ONT?
This can be established by
Putting the address into the BT Wholesale Availability Checker.
https://www.broadbandchecker.btwholesale.com/#/ADSL/AddressHome
It's the table and the two text lines below it which are most useful.
Remove any personal information (such as the address itself) if you post an image.

If the FTTP infrastructure isn't already in place then it needs to be physically installed, and that process cannot start until you are in residence to give the necessary permission.

That's a good sign, and hopefully the departing occupants will leave it in place. You won't be able to place an order with Sky until they've notified their current ISP (even if that's also Sky) that they are moving out.

Thanks for that info @TimmyBGood
Once the current owner gives notice to their broadband supplier that they are leaving the property, how long should I allow for the period from contacting Sky to arrange my broadband service to that service being activated?

ok, thanks for the confirmation of the 10 working days time. That should fit in well with my plans.
