I managed to do this as detailed here:
How to Separate SSIDs on the SR213/White Max Hub | Sky Community
But turned out to be a pointless exercise given how utterly useless the WiFi signal from the Max Hub is. I now have all WiFi turned off on the Hub & use a TP-Link Deco mesh. You can't split the SSIDs on that either but you can tell a device which band to connect to, or you can create a separate IoT SSID & restrict that to 2.4GHz only.
As @TimmyBGood said, BT/EE do the same thing on their latest routers. The reason is to maintain compatibility with their own mesh systems. In Sky's case that's the Pods, but they seem pretty poor too. During brief experiments with the SR203 Hub & SE210 mesh, splitting the SSIDs on the Hub prevented the SE210 from connecting, so surprised that was allowed.

I moved from Sky to EE and I'm still working on both 2.4 & 5Ghz, as like lots of others I have devices that only use 2.4. Oh and I'm using the same SSID fine.

I have discovered that nearly all our devices connect to the 2.4gHz unles they are within 2=3m of the max hub. This may explain why wifi throughout our house is so pitiful. I can get 131mps on my laptop when close to the hub and on 5 gHz but this drops to significantly less when on 2.4gHz. This morning I was getting 2.9mps via wif download with 29 upload, usually the values run around 25mps, so a siginficant drop. Previous routers that I can split and manually connect to the 5gHz are much faster. The Max hub does not seem to have sufficient power for any meaningful range in 5gHz which makes me think the inability to split is a conscious decision by Sky to mask the dire performance of their 'state of the art' equipment. Please Sky, be honest about the equipment you provide or, even better, use a hub that we can splir the networks and will actually power something half way decent around a house without having to have additional boosters that require electricity.

@nicky15 Would be better if you could see what channel the 5Ghz band is working in!
