I contacted Sky from an O2 store to cancel my subscription and change provider. Sky are still trying to charge me and also add charges to the bill. I am no longer a customer. I would like to speak to a person about this but the automated service is bribing me to pay outstandings before I can speak to someone.

That sounds like your cancellation didn't complete successfully., or you owe Sky money. Did you by chance prematurely cancel your direct debit or continuous card payment details from your account?
Don't forget that a notice period must be served if you are outside your minimum term period, and Sky charge a month in advance and continue to charge until the end date of the service.
Unfortunately the Sky process is that no advisor will be able to talk to you or look at your account whilst you are in arrears, so the only way to correct this would be to pay what Sky say is owed then you will be able to phone Sky and understand exactly what the actual status of your account is. Sky will of course pay back any credit that your account ends up in after terminating the service.

I had broadband and line rental. My contract had run out so I was under no obligation. The person I spoke to reassured me that I could switch provider at any time without any further charges. He asked me why I was leaving Sky and I explained I was switching to a cheaper provider with better service. Now I find I am still being charged, late payment fees adding up, and no means to connect to human service to discuss this issue

Did you receive confirmation from Sky that you cancelled? (If you did not receive any cancellation confirmation, then you haven't cancelled)
Your new provider may not have advised Sky correctly - or in some cases they couldn't...
Unfortunately, you may well have to pay the outstanding balance to speak to someone.
