The billing date stops the day Sky stops providing you a service and the following "final" bill will then be generated as a credit for overpayment your made to cover the period after the 10th Jan.

It depends on the notice period - payment may be due for Sky services (even if not used) past the 10th Jan. (e.g. TV services need 31 days notice)
