My bill is due 23 December, am I able to change the date of this bill to a later date and pay a slightly higher bill or am I too late to change it?

Likely to be too late to change it now. Sky Q and Sky+ bills are generated 2weeks before your billing date. Mobile and Glass/Stream bills are generated 3 days before the billing date.
