How do I change my sky community user name - mine is my name + someone else's?

You can't. You'd need to cancel your Community account (click on your avatar in the top right, then settings, then close account) and restart a new one. You will lose any accumulated point/levels.

If I close my community account- does it affect any of my other sky services

You should be able to but it would need to be removed from the old closed account first.
