how comes I can log in and add extras to my Sky package but when I try to cancel something on the chat it can't do that for me?

SImply because Sky don't provide that service. Call to give the 31 days notice required.

And be aware if you have 'in contract' discounts you may not be able to remove them. Also make sure cancellation of a certain add-on doesn’t cancel another part of a discount.
