I keep reading this is possible, but whenever I try I get an error message. So is there a workaround?

No.

You can get the Sky Go app for Apple TV boxes but you need a multiscreen/whole home sub to use it.

It's not possible with Sky Go on an iPad. Sky want to make money. They make this by charging for multiscreen.

The Go app does not permit 'mirroring' from phone or tablet, on any platform.
