Sky normally wait until there are a few episodes 'in the bank' before starting to show them. There are often random week long hiatuses (and mid-season breaks) with these type of network shows so I think Sky prefer to wait until all (or at least a large chunk of) the episodes have been broadcast before dropping them here.

I saw episode 9 last week when I was briefly in the states for work - lots happens!

According to Geektown, S2 started airing in the US on October 12th 2025. Surely all of S2 should have aired over there by now?

There was a mid-season break just before Christmas. The continuation of S2 with ep9 only began last week.
