Poor network stability

We have sky FTTP 300mbps download speed and 50 upload

The latency / ping rates are been awful and the network is unstable. It varies so much that gaming is impossible and I have an upcoming exam (remote from home) but the prechecks say that the connection is too unstable (peak of 11,000ms ping)

This is the case via both WiFi or Ethernet, and WiFi is actually better than Ethernet. I have tried this on multiple devices.

Router is a white sky max one.
I have changed the router name so there are only 2 devices (phone and laptop) connected to the router but this has not improved it.
I have also tried using a different router with similar results.
I have restarted the router so it can 'reconnect'.

It has always varied and I have been troubleshooting / monitoring it over a number of days with no avail.

Therefore I think it is due to the signal to the property rather than the from the router to devices.

Any assistance will be greatly appreciated!

Results (laptop) Via Ethernet (connected directly from the router to laptop with cat 8 cable):

On WiFi (phone) while next to the router:
