FTTC maxes out at 80mbps with G.Fast maxing out at 300mbps.

It does, your question was is Sky Fibre 500 FTTC or FTTP. Its FTTP, but you can go up to 900mbps.

That's down to the wholesale bands they are buying and the hardware in the current Hub. There's no particular reason Sky couldn't offer the speeds above gigabit as EE is doing now.
