TV where we are has no option for apps, no Chromecast or screen mirroring.

As mentioned we already have Sky but the Sky Go app and Sky Store app won't let you watch to an external display (ie usb-c to hdmi) and just says blocked.

I haven't setup everyone's mobile to watch Sky Go or downloaded movies on multiple devices. Just got it on the tablet so could plug into the TV to watch stuff.

If I can do with netflix, paramount, discovery, prime then surely for a service costing me 5x as much we should be able to have similar functionality.

So I have films purchased and downloaded to watch while we are away.

But Sky Store does not support external output to a TV, this is the same for Sky Go (so we can't watch anything we pay or subscribe to as a family while away)

How backward is this? I can watch Prime or Netflix (Not checked Disney or Paramount yet) using external output, so why not Sky Go or Sky Store purchases.

This is a long shot but if your TV is a LG one then you might be able to install the Sky Store app via it. If you are not a Sky TV customer then other options are to use a Google Chromecast device or use a laptop or PC to connect them to your TV as this should work,

Does the TV you were planning to do this on have a Sky box connected to it ?

No. It's Freeview only and thus reason why I downloaded stuff to watch on an evening while we are away.
