You might want to register the stolen device here:

https://www.immobilise.com/

Sky should sent you a replacement sim but you do have to keep paying for the device if you are still doing this before it was taken.

If you phone has been stolen then you need to follow the advice already given here and contact Sky so they can block it, you will have to keep paying for it though.
