All mobile internet and mobile coverage disappeared this morning on Sky Mobile, and checking the service checker it says they are doing upgrade work that is scheduled to be complete 'by 8pm on 20th April 2026'. On what planet is that acceptable service?

It isn't really but I'm not sure what you want Sky to do seeing as they do not own or maintain that or any other masts. Try using wifi calling if and when you can is pretty much all you can do if you have no service.
