You would need to order a new sim and call Sky to cancel the one you have now which you can only do if you have had it for 12 months or more. The number to call Sky on is just 150 and a new sim can be ordered here:

Otherwise Sky may change your number if you are receiving threats via the mobile which you've reported to the police and have a crime reference number.
