How do I upgrade the data plan on my sim? It wouldn't let me do it online.

You should be able to change the dataplan once per month from your account.

...otherwise, call Sky on 150 to change it for you.

I guess I'll have to give them a call, since they show me the options for upgrade, but I can't choose one, the buttons are grey and I can't press them.

Yes, I've only had the contract for a month.

You need to wait a couple of months before you can change your data plan @Ruben
