Using mobile data via either a physical sim or an esim is going to be really expensive so the best thing you can do is to make sure data and roaming is turned off and instead connect to the ships Wifi.

Although note that on-board connectivity to the outside world will ultimately be over a satellite connection and so also very costly.

Fundamental physics apply: cellular data is a short range signal (typically a few kilometres) and so doesn't work particularly well out at sea. When in range of land, almost all the Caribbean* has 'rest of world' tariffs and is consequently extremely expensive: several pounds per megabyte.

*The exception being the small number of islands which are overseas territories of EU nations.
