I was sending the iPhone 16 pro max to wife through royal mail courier. But they missed my device and now I am paying EMI for a phone which I dont have. I doubt the courier knicked it. However, just want to know if sky can lock the device so the person cannot use. Cant do it through apple as I havent created any account for the device. It was an anniversary gift. An unboxed phone. Please let me know thd measures i can take as royal mail said they cannot give the compensation amount.

If this iphone is one you got from Sky then you do need to report it to them as they can block it as per this:

https://www.sky.com/help/articles/lost-or-stolen-sky-mobile

And you might want to register the lost device here:

https://www.immobilise.com/
