what does it mean if my delivery date says "comimg soon" is it because i ordered on a sunday and they've not yet processed it?

Credit checks still to be completed maybe. The most up to date information (after credit checks are complete) on your particular order should become available at:
https://www.sky.com/help/articles/track-sky-order

When your order is ready you should get an email from Sky, and then another from the courier (usually DPD) which will have details of your 1 hour delivery time slot. As customers we have no insight into stock levels or the delivery timescales.

It could also be that at present they don't know of a delivery date as the stock for your order has arrived from the supplier but should be soon enough.

do you know if they are relatively fast at restocking, if that is the issue?

As customers here nobody can say who long it will take by coming soon can mean anything from a few days to a few weeks. It should update when it has been dispatched to DPD who in turn should contact you a day or two later with a one hour delivery slot.
