I have a new iPhone 16 Pro Max arriving tomorrow but my current mobile plan with Sky uses a SIM card. How do I get an eSIM and keep my old number TIA

The easiest way is to move the SIM from old to new phone.

Personally, I wouldn't bother...

If it's a UK model then it has a SIM slot.
