Reading that email it does appear to say that but you don't actually have to !

I have just upgraded to an iphone 15 Pro fro and iphone 13. I am keeping my current data plan and would normally just transfer the sim to new phone but received an email saying I need to convert to an esim.

I would like to keep a physical sim as I do occassionally transfer it to an old phone when doing adventurous activities so I don't damage an expensive phone!!

The question is do I need to change to an esim or can I simple move the physical sim over - the iphone 15 has a sim tray still?

The UK version of the iPhone can take a physical sim so you can just move it across from your old one.
