If I were to order and iPad and Airpods today on a 24 month contract what date would I be billed every month

For a 24 month contract you need Swap12. (Swap24 is a 3 year contract)

That really depends on what date(s) they turn up on and that you sign for them.

Swap24 is a 36 month contract.
