Trying to add one episode of Emmerdale to my sky glass playlist, it keeps adding series. Told to press + button again to adjust 1 episode but removes series completely

Yeah that is how the playlist functionality works, it can't do individual episodes it works on the entire show.

Also be aware that watching a single episode from demand generally then adds to your continue watching rail so you are either needing to fast forward to remove it or leave it sitting there.

A weakness in the Playlist CW system needs reviewing in my view.
